The Za’atar blend is a mixture of Palestinian thyme combined with the highest quality of special spices, sesame, vegetable oil, and a little bit of salt. Za’atar is traditionally grown on the mountains of Palestine to produce the freshest blend in the world.

Freekah is wheat harvested early while it is still green. Freekah is flame roasted according to authentic traditions to give it a smoky delicious flavor. It is then rubbed, dried and crushed. Freekeh is a common staple in Palestinian cuisine. It is also a healthy and delicious rice substitute.

Al’Ard Palestinian Green Olives are handpicked by the hands of Palestinian families carrying the heritage of their ancestors farming practices. These olives are from rain-fed Ancient Nabali and Rumi Olive trees, they are prepared and cracked the Palestinian authentic way and the uniqueness of its preparation is the secret to its distinct delicious taste and flavor. The bitter peppery green taste of each olive carries the rich flavor of history.

Maftoul is a real labor of love. If you ask any Palestinian, they will most likely be able to share memories of their grandmother making maftoul at home. Al’Ard works with a women’s cooperative near Hebron where the women make maftoul just like their grandmothers. They use wheat bulgur, flour and water to work together small balls through ever smaller sieves until the maftoul is ready to be steamed and dried.
